A culinary delicacy available for a short time! Sold in bunches of 10 scapes for self-serve pickup at our farm in Kingston, MA.
Garlic scapes are the green, curly flower stalks that grow from the tops of hardneck garlic plants. They typically appear in late spring to early summer and are harvested before the flowers bloom, which helps the garlic bulb develop more fully underground.
Characteristics:
Appearance: Long, slender, curly green stems with a closed flower bud at the tip.
Flavor: Milder than garlic cloves; a mix of garlic and green onion with a subtle sweetness and less pungency.
Texture: Crisp when fresh, similar to asparagus or green beans.
Culinary Uses:
Garlic scapes are versatile and can be used both raw and cooked. Common uses include:
Pesto: Blended with nuts, cheese, oil, and lemon juice to make a bright, garlicky spread.
